PayPal question, tho -- do you guys mean sending money to one person via PayPal who then writes a check? I don't know. Much as I love you guys, I can't imagine many people feeling comfortable enough sending money to one of us. Whereas sending money directly to L4L guarantees that the money gets to the organization itself.
Whereas setting up a particular account with L4L means that the money goes straight to them and no one has to worry about trusting a random forum stranger.

Hey Kel,
I'd be happy to scope out L4L, get a look at their annual review to check out their cost/benefit ratio, and if we still want to go ahead can speak to a development officer there about creating a designated fund. By doing that it would allow people to contribute whichever way works best for them, i.e. check, credit card, PayPal. I've done this before with a large group and what they generally do is set up an account code to which all funds can be directed. For example, we could all fall under a general heading of SC.net, with funds raised to be listed in memory of Ian. The fund could also maintain names of all individuals who contribute, and acknowledgment letters would be sent to each individual. Normally an update on funds received in someone's memory is sent to a family member, so if we wanted this to be done, we should maybe check with Gio to see if he could clear the best (confidential) way for this to reach Stewart and/or Ian's daughters.
FYI, notice to family members usually just says that "a contribution has been received by so and so," with no specific dollar amount attached.
We may also want to attach some kind of time frame, regarding which L4L might be best able to advise.
