FANTASY FUDGE
(recpice from COOKS.COM) This used to be on the side jar of Marshmellow cream very easy to do and soooo good



3 c. sugar
3/4 c. butter
2/3 c. (5 1/3 fl. oz. can) Carnation evaporated milk
1 (12 oz.) pkg. semi-sweet chocolate pieces
2 c. Kraft marshmallow creme
1 c. chopped nuts ( I don't use nuts)
1 tsp. vanilla

Combine sugar, butter and milk in heavy 2 1/2 quart saucepan; bring to a full rolling boil, stirring constantly. Continue boiling 5 minutes over medium heat, stirring constantly to prevent scorching. Remove from heat; stir in chocolate pieces until melted. Add marshmallow creme, nuts and vanilla; beat until well blended. Pour into greased 13 x 9 inch pan. Cool at room temperature; cut into squares. Makes approximately 3 pounds.
Double recipe: Use this full 13 ounce jar of Kraft marshmallow creme, doubling all ingredients. Prepare fudge as directed, using 5-quart Dutch oven. Pour fudge into 2 greased 13 x 9 inch pans. Makes approximately 6 pounds.

Hey K, lovely to hear from you again.

Charcoal without a doubt. It's one of the smells of summer, along with cut grass, walking down the road at the weekends or evenings and you can smell the barbeques heating up and getting ready to cook. The food tastes different too. Jacket potatoes wrapped in foil with butter and onions and pine nuts, veggie kebabs. You can cook it all on gas and it tastes the same as cooking it indoors on the stove. It's a totally different flavour when cooked over charcoal. Living on the beach, I swear it's catching here. Someone lights up a charcoal bar-be and everyone else follows.

What's cookin' tonight? Something from the garden.

Turnips and radishes (the first plantings, at least) are getting ready to harvest like mad. And my first purple beans are ready today, I'll probably toss them raw in a salad tonight with some of my wild arugula and butter lettuce which is nearly ready to bolt to seed if I don't eat it up asap.

I need to find some good recipes for turnip & radish greens as well, as I just can't bear tossing them all away just to enjoy the roots...

I lost 40 pounds on a low carb diet (the Carbohydrate Addict's diet, eating carbs one meal a day), but gained it back when I fell off the wagon. You have to be committed to it forever or it won't work, and I never met a potato I didn't like, so...

The way low carb works is that when you cut excess carbs, which are the body's first choice for quick energy, you fall back on stored fat calories. Your insulin also drops, which means you lose water, so you can lose several pounds of water weight quickly, but after that, it's slow going. But it can be worth it short term to kill sugar addiction, even if you don't stay with it long term.

Dive, take a look at South Beach. The book is informative even if you don't try it. Basically, it's cutting out all of the refined crap and using food for it's healthy properties. I really liked a lot of the recipes, but like Luna said... it's a lifestyle. If I were to try another program, I'd go back on that.

Can't treat my ADHD with meds b/c I'm allergic to almost everything, so I wind up eating sugar all day. I'm having some success with killing the cravings thru exercise, but it all really went steroidal when I quit eating meat. As it turns out, foods like yogurt - which you'd think would be mostly protein - are loaded with sugar and I wound up gaining about 15 pounds.

I'm looking at "Metabolic Miracle," which has you cut out most carbs for a few weeks, then gradually phases them back in. No way I'm giving up fruit forever, but I have to get a handle on whatever is going on with my energy levels and it appears glucose is the likely culprit. Won't be fun to try to follow this without meat, but there are a variety of veg options in the cookbook, luckily...

Have you tried Greek yogurt vs. the Americanized yogurt? Greek yogurt tends to have twice the protein and half the sugar, and it tastes so unbelievably rich that it actually fills me up in the morning and makes a great snack too. I bought some regular yogurt last week for the first time in maybe a couple years (because it was on sale) and I couldn't even eat it - it tasted sickeningly sweet and nauseating to me. Both Chobani and Fage Greek yogurts are my favorites.
