Ladyhawke, I'm quite curious about your butterscotch cake pictured upthread:

Are you the "Creepy Baker" whose blog that exact photo of the cake was posted in, back in 2010? If so I'm curious why you haven't updated your blog in so long...there are some interesting recipes there...

Lynne wrote:My concern with vegetarian/vegan eating is twofold: getting enough protein to fuel recovery and muscle repair processes, especially after exercise, and the pernicious effects of carbohydrates on health. A high-carb diet creates a lot of work for the body's endocrine system, and one of the things insulin does is storing excess carbs as triglycerides in the body's fat tissue. So if you're concerned about heart disease, you have to be concerned about triglycerides (not cholesterol), and a high-carb diet creates the conditions for high triglycerides. Different people have different sensitivities to carbs, but this is something that I know I have to pay attention to in my own eating and cooking habits.

Lynne -- Exactly. We need proteins for good health, and I am very sensitive to carbohydrates. When I eat a diet high in carbohydrates, I tend to develop hypoglycemic symptoms, I feel sluggish and tired, and I gain weight. During the last 16 months, I have stuck with a very simple low-carb diet. I have lost over 90 pounds, so people ask what I am doing. When I say that I eat a low-carb diet, people assume that I don't eat vegetables. On the contrary, I have become very creative with the veggies that I do eat! Fresh, simply prepared meat and veggies are so good, and I feel so much better.

I'm not offering the following to proselytize about vegetarianism (I really think it's personal and individual and never judge) but from my experience, it's just as easy to eat a high (I'd add lean) protein diet as a vegetarian, or even vegan, as an omnivore. Unless I'm traveling, here's a typical day in the Cat household (protein in parentheses):

Breakfast: 3 egg whites or 3/4 cup Egg Beaters scrambled with american cheese, oatmeal (32)
Lunch: Amy's Brown Rice and Veggie Bowl (9)
Snack: Fage 0% Greek Yogurt (14)
Coffer: nonfat 16oz Cappuccino (9)
Dinner: Fiber Gourmet Light Pasta and Veggie Meatballs (27)
Late: Green Smoothie of 2 Cups Kale 1/2 Banana 1/2 Apple & Protein Powder (15)

I basically follow a very high fiber, high protein, little refined carb diet and eat different things everyday. The above counts in at 106 g protein, cal. approx 1400, with fiber in the 55g range.

Once again--not to persuade anyone of becoming vegetarian, just trying to counter a common fear for anyone already interested.

Sadly (for my children), I have little to contribute to this thread. I'm an adherent of the Stewart Copeland School of Cooking. Toast, tea and bowl de cereal are about the extent of my culenary repertoire as well.
In Dallas, the only game that really mattered was in the word gamelan.

This is exactly what happens to me if I eat white bread, white pasta or white rice. Switch it all to wholemeal and it doesn't happen. I had terrible headaches for a few days after switching over, rather like I was de-toxing, but then felt so much better. No bloatedness and so much more energy. I also lost weight. Wholemeal products seem more filling so you eat less. If I eat white rice or white pasta nowadays I need to go and lay down for a while.
I miss toast made with white bread as it's just not the same made with brown bread but I feel so much better for cutting out the white stuff. I'm no dietician but I guess it's something to do with starch.

I've been a veg on and off since I was 12. more on than off until my daughters were all born- and having 4 other meat eaters in the house I got lazy.
Now that my new spouse is a veg as well, it's easier cooking good lean veg protein for two. He can't have as much protein as I need, due to liver issues. But I eat a little extra and we're good.

I was a vegan many years ago, and it was MUCH harder then, especially with traveling. It can still be a challenge, esp when not at home, but things like my Happy Cow app on my phone show me good vegan and vegan friendly options at places.

The meat substitutes are much better these days, as are the vegan cheeses. And in LA? Spoiled for choice with healthy vegan options at restaurants. It would have been very difficult years ago. I think I wasn't getting quite enough protein a couple months ago, but now feel really good. That said, it might be I'm training again!

That said, I am more in favor of fresh, local and not pre-packaged and refined foods most of all. When we lived in NZ, I got way spoiled because we lived near an organic butcher and they raised most of their animals. As humane as that industry can get. But frankly, there is way too much crap and GMO in the meat here, and I am doing just fine!

I became a vegan again a couple months ago as the dairy was REALLY messing with my sinuses. SO much better and so is my skin since quitting dairy. And it's been pretty fun challenging myself in the kitchen. I'm getting pretty good at vegan cupcakes :)

That's cool Meg...I hadn't read all of this thread yet so I missed that you had gone vegan! If you have the BabyCakes cookbook, check the comments on Amazon (I'm just on my way out right now or I'd pull them up) since the recipe in the book isn't quite what they use in the shop. She went on Martha's show and gave up the goods on their unbelievable frosting and one of the comments corrects the recipe accordingly. Coconut oil ftw--I feel great since we've been using it for certain things. Nutritional yeast, too!

Here's one of my favorite recipes from Soul Vegetarian in Atlanta (a vegan soul food joint, and it's *amazing*). I only make half the cheese sauce and pair it with my fiber pasta but it's soooo good:

I am a-pondering this morning (now that I am glad to wake up and have another day, thanks, vespapod!) that we have a thread I can no longer make sense of ("Just Something To Spark Conversation") and a cooking topic! Gotta love the SC.Net. Something for everyone!

Time for breakfast...

The whaaaaa? app....?

I do need some advice from you two (meg & Gina)...have probably eaten more black bean burritos than are good for me the last month or two (which is usually the sole non-meat entree at the beef-heavy restaurants around here.) Luckily I'm also a big fan of the spinach enchilada. ;)

I do find that BBQ joints often have the best veg sides, IF you can find one that doesn't mix ham in with everything. Sigh.
On Google - site:stewartcopeland.net "your keyword here" - thanks DM!!

Curses, that sounds good but I wonder if it would work with sauteed garlic. That much raw would make me ill for days, dammit.
