That is my fave Gordo noise too! Look at him looking all Chris Kringle. He's a sly dog, that one.
I don't know the arrangement, so I can't be sure, but the reaction of Sting and Dom right before that noise makes me think that the fiddlers missed the ending.
About 3:04, It looks like Dom and Sting are surprised when the fiddlers keep playing: they both turn and look.
Honestly, I was surprised. The fiddle part is kind of a rhythmic texture more than anything else, so I was surprised that it'd be featured in a breakdown. The fact that the fiddlers don't do anything special there is the giveaway, to me. But I'm still not sure.
Then, Dom and Sting Both raise their picking hands as if to wave or signal the fiddlers, but they realize it's too late: they are on TV. And the Today show is Live. Sting recovers, pumping his fist. Makes the fave noise, and does basically the same ending, louder, again.
I'm still not sure, but the grin Sting flashes towards Dom's side about 3:22 makes me think that it was a great recovery, and not the planned ending! I love stuff like that.

(This live recovery story I know for a fact. I asked their drummer about it a couple of months later, and he remembered it and confirmed it.)
