Cebiche (6-8 servings)

This is a very typical dish from the coast line of Peru. It works best with "Corvina" but you can experiment with whatever fresh fish are available to you.

2 pounds fresh fish filet from the refrigirator -not from the freezer-
1 cup of peruvian lemmon juice (or acid guinea lemmon)
a bit of peruvian chili chopped
salt and pepper
large peruvian red onion, finely chopped
two ears of boiled corn, cooked and cut into 2-inch pieces
two sweet potatoes, cooked, peeled, and sliced
*optional a bit of cilantro, finely chopped

-Wash the fish and cut into small cubes. Put into a bowl and added peruvian acid lemmon juice, red onions, peruvian chili, salt and pepper. Then mixed all of it for around 3 to 5 minutes. Inmediately serve it with the boiled corn, lettuce and sweet potato. Voilaaa!!!

I just posted a tailgate thread for RR...I have the feeling a bunch of people will be there early. Let's hook it up! We'll have wheels. We could make bathtub margaritas and get hold of a big pail and a dipper somehow...unless there are restrictions about bringing your own booze actually onto the grounds of RR...shit! I better go check...

search an acid lemmon.... I tried with one green lemmon in Paris, I think it came from Africa...and it works...not like the peruvian one, but works...thinking on making a gastronomical trip to Peru :wink:
